How to choose your matcha

Which one

Mt Fuji Organic Premium Ceremonial Grade is the top of the range, organic and stone ground, for drinking on its own.

Ceremonial Grade is the everyday choice, the same preparation at a lower price.

10 x 2 g sticks are single servings, one bowl each, useful for travel or for trying matcha before buying a tin.

Moringa Matcha is a blend rather than straight matcha.

Genmaicha with Matcha and Green Boost are tea bags, for anyone who wants the taste without whisking anything.

30 g or 100 g

One bowl uses about 2 g, so a 30 g tin is roughly 15 bowls and a 100 g pouch is roughly 50. If you drink matcha daily, the 100 g is the better value. If you are starting out, take the 30 g or the sticks, since matcha is best drunk fresh.

What you need to make it

A bowl wide enough for a whisk to move, a bamboo whisk and a scoop. Our four piece ceremony set has all three plus 30 g of Mt Fuji matcha, which is the simplest way to start from nothing. Bowls on their own are in the ceramics collection.

One thing people forget

Do not use boiling water. Around 70 to 80 degrees is right. Boiling water makes matcha taste harsh, and most people who think they dislike matcha have only ever had it made too hot.

Frequently asked questions

What does ceremonial grade mean?

It is matcha made from young leaves and ground fine enough to drink on its own, whisked with water. Culinary grades are made for mixing into milk, baking and cooking.

How much do I use?

About 2 g, one heaped scoop, to roughly 70 ml of water for a thin bowl.

What water temperature?

70 to 80 degrees. Boil the kettle, then let it stand a minute or two.

Do I need a whisk?

For drinking it on its own, yes: a bamboo whisk is what makes the texture. The four piece ceremony set includes one. For lattes or cooking, a small milk frother is enough.

How do I store it once opened?

Sealed, cool and away from light. Matcha fades with air and light, so finish an open tin within a few weeks rather than months.

Can I use it in lattes or baking?

Yes, though the premium grades are wasted in a recipe. Use the standard Ceremonial Grade or the sticks if milk or sugar is going in.
